Valençay Rouge "Signature". Degree: 12.5%. Vintage: 2017. Appellation: Valençay. Red color. HVE. Terroir: Parakeets, Stones and Silt. Vatting as soon as the grapes are collected, monitoring of the temperature in thermo - regulated vats, fermentation for 6 to 8 days. Assembly in tank of the three grape varieties after fermentation. Aging in vats 6 to 8 months for a harmonious marriage. Taste: Fruity and Light. Goes perfectly with: Cold cuts. Savory pies. Keeping: 5 years.

Jean François Roy's farm is located in the town of Lye on the borders of Touraine, Sologne and Berry in the canton of Valençay north of Indre, Center region, pleasantly hilly with the prestigious castle partly linked to Talleyrand .
