Savigny Lès Beaune Blanc. Degree: 13%. Vintage: 2017. Appellation: Savigny les Beaune. White colour. North East of Beaune towards Dijon, the vineyard is to the right and left of the Nationale 74. Soil: Clay and limestone Graininess: Average + Yield: 45 hl / Ha. Pressing away from air (press under carbon dioxide), fast and very smooth, of ripe grapes. The musts are filtered before alcoholic fermentation to ferment only grape juice. Vinified and aged in oak barrels, 25% of which are new barrels for 18 months, light stirring. Long aging on white wines gives us a lot of stability and very good aging. Taste: Dry and Fleshy. Will accompany perfectly: Grilled fish. Fish in Sauces. Keeping: 10 years.

Maldant Pauvelot's Mac Malden Whisky was born out of the passion of Burgundy winemaker Jean-Luc Maldant for this noble Scottish product. After several visits to Scotland and Speyside in particular, Jean-Luc Maldant teamed up with distilleries and started his own selection of whiskies. He adds his paw to this selection by making agings and refinings, especially in Chardonnay barrels or in Corton barrels.
